This easy Baked Apple Cinnamon Pancake Recipe is a perfect idea
for a brunch or breakfast with apple fruit!
Serve with maple syrup and whip cream or ice cream for the kids, and the "kid at heart"!
Plain pancakes are really quite boring, and the addition of apples not only adds amazing flavour, but adds nutritional value to the pancakes too!
FOR THE APPLES
4 medium size apples
1/4 cup butter
1/2 cup brown sugar
1 tsp. ground cinnamon
FOR THE PANCAKE BATTER
6 medium eggs
1 cup all-purpose flour
1 cup milk
3 tbsp. granulated sugar
1/4 cup butter, melted
2 tbsp. icing sugar
Peel, core, and thinly slice the apples.
Note - If you are making this recipe for a large group of people, simply multiply the ingredients accordingly, and use an apple peeler to make quick work of preparing the apples.
Melt the 1/4 cup butter in a 12 inch non-stick skillet.
Add the sliced apples to the pan and sprinkle with the brown sugar and the cinnamon.
Cook for about 10 minutes on medium heat until apples are tender and the liquid in the skillet has evaporated.
Transfer the apples to a 9" x 13" oven-proof baking dish.
Meanwhile, in a blender, food-processor, or by hand using a whisk, blend the eggs with the flour, milk, sugar and the melted butter, until mixture is smooth.
Pour the pancake batter over the apples in the baking dish.
Bake at 425° F for about 25 minutes or until the pancake is browned and puffed.
Garnish with the icing sugar (sprinkle).
Cut into serving sizes.
Serves 6 - 8 people.
