These easy Whole Wheat Muffins include apples and honey to make wholesome, moist and healthy apple muffins!

Make a double batch, and store the "extras" in the freezer, ready to remove when you are looking for a healthy addition to your lunch bag!
1 1/2 cups whole wheat flour
1/2 cup all-purpose flour
2 1/2 tsp. baking powder
3/4 tsp. salt
1 medium egg, beaten
3/4 cup milk
1/3 cup vegetable oil
1/3 cup liquid honey
1 cup cored, peeled, chopped apples
In a large bowl, using whisk or a fork, combine the whole-wheat flour, all-purpose flour, baking powder and the salt.
In another bowl, whisk together the egg, milk, oil and the honey.
Add the egg mixture to the flour mixture, stirring just until moistened. Do not over mix.
Gently fold in the chopped apples.
Spoon the muffin batter into a greased or paper lined muffin tin, filling 3/4 full.
Bake at 400° F for 10 minutes, then reduce heat to 375° F and continue baking for about 8 - 10 minutes, or until a toothpick inserted in the center comes out clean. Do not over-bake the muffins.
Serve with butter or margarine.
Makes about 1 dozen muffins.
Muffin Making Tip
When making muffins, once you have made the batter, bake it immediately because the baking powder begins to "work", as soon as the "wet" ingredients have been added to the dry ingredients, by relaxing the dough and causing it to rise.
Also, be sure not to over bake the muffins or else they will become too dry.
