warm with ice cream or at room temperature with whipped cream, this
recipe makes a specialty crisp combining two amazing flavours of sweet apple and tart rhubarb!
I often make this apple crisp to serve as a snack in the evening with a glass of milk, or a warm cup of coffee ... so yummy!
One of those lip-smacking moments for sure!
Ingredients
3/4 cup granulated sugar
3 tbsps. cornstarch
3 cups chopped rhubarb
2 cups cored, peeled and sliced apples
1 cup quick-cooking oats
1/2 cup brown sugar
1/2 cup butter (or margarine), melted
1/3 cup all-purpose flour
3/4 tsp. cinnamon, or less, to taste
ice cream or whipped cream (optional)
Directions
Combine the sugar and the cornstarch in a medium size bowl.
Add the chopped rhubarb pieces and the sliced apple pieces, and toss to coat.
Transfer rhubarb and apples to an 8" x 8" baking dish.
In another bowl, mix, with a fork, the oats, brown sugar, butter, flour and the cinnamon, until well combined, and the mixture resembles coarse crumbs.
Sprinkle the mixture over the apples and rhubarb in the baking dish.
Bake at 350° F for 45 minutes or until fruit juices begin to "bubble", and the fruit is tender.
Serve warm or cooled with ice cream or whipped cream.
Serves 8.
If you have any leftovers, you can store it in the refrigerator for several days, and warm it up in the microwave for a snack on another day!
