Nothing says "Fall" quite like a bowl of delicious, heart-warming soup made with apples and cream!
Why not surprise your family with a bowl of apple soup to accompany dinner!
A good idea for an appetizer soup for ANY meal, or a perfect idea for a lunch-time soup.
You can use almost any variety of apples for this recipe, however you may need to adjust the sweetness a little, if necessary.
Ingredients
4 cups cored, peeled and cubed apples (about 6 large size apples)
4 tbsp. butter
1/2 tsp. cinnamon
2 tbsp. granulated sugar
3 cups water
pinch of salt
FOR THE CREAM
1 cup sour cream
3 tbsp. all-purpose flour
1/4 cup water
squeeze of lemon or 1/2 tsp. bottled lemon juice
Directions
In a pan, over medium heat, saute together the cubed apples, butter, sugar and cinnamon (for about 5 minutes).
Add the water, and bring the mixture to a boil, then reduce heat to medium low, allowing mixture to simmer for about 10 minutes.
Add a pinch of salt.
FOR THE CREAM
In a bowl, combine the sour cream, flour and water, and whisk until well combined and creamy in texture.
Remove the apple mixture from the heat, and stir in the cream mixture and return to the stove.
Slowly bring the mixture to a boil once again, stirring almost constantly, reduce heat and allow to boil for one minute, then remove from the heat.
Allow the apple soup to cool slightly before serving.
Makes about 4 servings.
Soup Tip
For a special presentation and taste, add 1/4 cup fresh or frozen cranberries to the soup and allow soup to simmer for an additional 5 minutes or until the cranberries are tender. This apple cranberry soup would make a great soup for Thanksgiving or Christmas Dinner!
