I found this recipe for an apple cake in my local newspaper, (the Hamilton Spectator), and made it, slightly adapted, for my family!
You can make the toffee sauce, or use store-purchased toffee or caramel sauce as a topping.
Or, serve this cake plain, or with a dollop of whipped cream.
You can bake this cake in a 9" deep cake pan or, I used a 9" spring-form pan.
This cake serves about 10.
Ingredients
FOR THE CAKE and TOPPING
1 3/4 cups all-purpose flour
3 tsp. baking powder
3/4 tsp. salt
3/4 cup granulated sugar
1/2 cup butter, softened
1 medium egg
1 1/2 tsp. vanilla extract
3/4 cup milk
3 medium size apples, grated
1/4 cup brown sugar
3/4 tsp. ground cinnamon
FOR THE TOFFEE SAUCE
1/2 cup butter
3/4 cup brown sugar
1/2 cup granulated sugar
1 cup whipping cream
1 1/4 cups corn syrup
1/2 tsp. vanilla extract
Directions
FOR THE CAKE AND TOPPING
In a medium size bowl, combine, and whisk together the flour, baking powder and the salt.
In a separate, large size bowl, using an electric hand mixer, cream together the sugar and the butter.
Add the egg and the vanilla extract, and continue to beat until mixture is light and fluffy.
On "low" setting, gradually mix in the dry (flour mixture) ingredients, alternating with the milk, until well blended.
Pour the cake batter into a greased (I use non-stick cooking spray), 9" DEEP cake pan, or a 9" spring-form pan.
Pat the grated apple on top of the batter.
Combine the brown sugar and the cinnamon, and sprinkle this mixture over top of the grated apples.
Bake at 350° F for about 60 minutes or until a toothpick inserted in the center of the apple cake comes out clean.
Allow cake to cool for about 10 minutes in the pan, then, if desired, remove cake to a wire rack to complete cooling.
To serve, cut warm (or cooled, or microwave re-heated slices of cake) and pour toffee sauce (homemade or store-purchased) over each slice of cake.
Or serve cake plain, or with a dollop of whipped cream, whipped dessert topping, or Greek yogurt.
FOR THE TOFFEE SAUCE
In a saucepan, mix together all the toffee sauce ingredients, until well combined.
Bring mixture to a boil, and allow to boil for about 5 minutes, stirring almost constantly to avoid sticking and burning, until sauce is smooth.
