The addition of cottage cheese gives the apple smoothie a creamy texture and creates a protein filled smoothie!
The ground flax seed, pecans, and raisins add enticing flavour and healthy nutritional value!
Note - This recipe is created to serve one; simply double the recipe if you wish to make a single serving of this Hot Apple Smoothie. (You may also need to adjust the microwave times, making them slightly longer.)
Ingredients
1 medium apple (any variety)
1/4 cup raisins (any type)
1/4 tsp. ground cinnamon, or to taste
1 cup warm water, divided
1/4 cup cottage cheese
2 tbsp. ground flax seed
9 pecan halves or about same amount of chopped pecans
Directions
Peel, core, and slice the apple into large size chunks.
Add the prepared apple pieces, raisins, cinnamon and 1/4 cup of the water to a microwaveable bowl.
Microwave the mixture on high for 2 minutes.
Remove bowl from the microwave, and allow to cool for about 2 minutes.
After 2 minutes add the cottage cheese, flax seed, pecans and slightly cooled apple mixture to a blender.
Add the cooled apple mixture and the remaining 3/4 cup of water.
Blend mixture together on high speed for about 1 minute, or until the mixture has reached a smooth and creamy consistency.
Pour into mug or glass and enjoy!
