*I made this apple recipe with apples and fresh blueberries, however you may wish to substitute other berries in the place of the blueberries, or use frozen berries.
Fresh or frozen, sliced strawberries or raspberries would work great too!
GOT frozen apples you want to use? They will work well for this recipe.
Ingredients
FOR THE FILLING
1/3 cup granulated sugar
1 tsp. ground cinnamon, or less
1/2 tsp. nutmeg, or less, optional
3 tbsp. cornstarch
8 - 10 medium apples, cored, peeled and sliced (about 2 lbs.)
3/4 cup fresh or frozen blueberries, *or other berries
1 tsp. almond extract
FOR THE TOPPING
1/3 cup rolled oats
1/3 cup ground almonds
(use a blender or "magic bullet" - see image at right)
1/3 cup packed, light brown sugar
1 tsp. ground cinnamon, or less
1/2 tsp. ground nutmeg, or less, optional
3 tbsp. chilled butter, cut into pieces
Directions
FOR THE FILLING
In a large bowl, mix together the sugar, cinnamon, nutmeg (optional), and the cornstarch.
Add the sliced apples and the blueberries.
Add the almond extract.
Toss the apples and berries to coat.
Set aside while you prepare the crumble topping.
FOR THE TOPPING
In a medium size bowl mix together the oats, ground almonds, brown sugar, cinnamon and the nutmeg (optional).
(Tip - A blender or a "magic bullet" work great for grinding almonds or other nuts - see image at right.)
Add the pieces of butter, and using a fork or your fingers, mix together the ingredients until the mixture resembles coarse crumbs.
Transfer the apple and blueberry mixture to an 8" square or round baking dish.
Distribute the crumble equally over top of the apples and blueberries.
Bake in the oven on a rack in the lower third of the oven.
Bake at 375° F for about 40 - 45 minutes, or until the top has browned and the fruit juice have bubbled up!
Allow to stand at room temperature for about 10 minutes before serving.
Serve warm or cooled.
Serves 6 - 8.
