This refreshing mixed fruit salad is complete with an apricot dressing. 

A perfect salad recipe for a crowd at a potluck, a picnic, a family reunion, a Holiday, or any special occasion or get-together.

This salad makes about 26 - 1 cup servings.

For larger groups of people you can make a double recipe (in two bowls!), and, if you wish to make this fruit dish to serve less people, simply reduce the ingredients accordingly.


Note - This fruit salad should not be prepared earlier than a few hours before serving time. Otherwise the apples and the bananas will begin to brown too much.

Try to choose apples that will not brown as quickly as other varieties. Granny Smith, Golden Delicious and Courtland varieties are examples of apples that do not brown as quickly as others.

You may also want to treat the apples to help prevent them from turning brown. It's quick and easy!

Ingredients

1 cup granulated sugar
1 tbsp. cornstarch
2 cans - 5 1/2 oz. each apricot nectar
1 tsp. vanilla extract
6 large apples, cored and chopped
8 medium size, firm bananas, sliced
1 medium size, pineapple, peeled, cored and cut into chunks (about 5 cups)
1 quart fresh strawberries (about 1 1/2 pounds)
2 cups green grapes







Directions

In a microwave-safe bowl, combine the sugar, cornstarch and the apricot nectar and stir together until mixture is a smooth consistency.

Microwave the nectar mixture, uncovered, on "high" power for about 6 - 8 minutes, or until slightly thickened, stirring at least every 2 minutes.

Stir in the vanilla, and then refrigerate the dressing.

In a large bowl, combine the prepared apples, bananas, pineapple, strawberries and the green grapes.

Drizzle the apricot dressing over top of the fruit, and toss gently to coat.

Cover and refrigerate until serving.

Makes about 25 - 1 cup servings.
