These Healthy Cranberry Apple Bran Muffins are a great idea for a recipe for breakfast muffins with high fibre, bran and fruit.
I made these muffins with All-Bran Cereal which includes natural wheat bran fibre. Other cereal made of 100 % bran should work equally as well.
A great muffin that is not only HEALTHY, but good, good, good tasting too!
1 1/2 cups All-Bran Cereal
1 cup milk
1 1/4 cup all-purpose flour
1/2 cup lightly packed brown sugar
4 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg, optional
1/2 tsp. salt
1/4 cup vegetable oil
3/4 cup chopped (or sliced), frozen (not thawed) cranberries
1 cup unpeeled, diced apples, any type
Combine the cereal and the milk in a medium size bowl, and allow to stand for about 2 minutes, or until the cereal softens.
In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg and salt, and set aside.
Beat the eggs and the vegetable oil into the cereal mixture.
Add the wet mixture to the dry ingredients and stir (I used a wooden spatula) just until combined. Do not over-mix, or else the muffin texture will become too "tight".
Gently fold in the chopped cranberries and the diced apple.
Transfer muffin batter evenly into a lightly greased (I used non-stick cooking spray), muffin baking tray, or into paper muffin cups.
Bake at 400 ° F for about 18 - 20 minutes, or until the tops spring back when lightly touched.
Makes 12 to 15 large size muffins.
