These Healthy Cinnamon Apple Muffins are very quick and easy to make. Muffins with apples that are scrumptious idea for breakfast, lunch or snack time!

Mmm-mm...muffins! They are delicious morning, noon and night!
Ingredients
2 cups all-purpose flour
1/3 cup brown sugar, packed
1 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 1/4 cup *peeled, chopped apple
1 egg, beaten with a fork
1 cup milk, room temperature
3 tbsp. butter, melted
Directions
In a large bowl, use a whisk or fork to combine the flour, brown sugar, baking powder, baking soda, cinnamon and salt, until well mixed.
In another bowl, combine the beaten egg, the milk, and the melted butter. Stir in the chopped apples.
Add the wet ingredients to the flour mixture, using a wooden spoon, and gently stir, just until combined, do not over-mix.
Spoon the muffin batter into lightly greased or paper-lined muffin cups, filling almost to the top.
Bake at 400° F for about 15 minutes, or until golden and muffin tops are firm to the touch.
This recipe makes 12 medium-large apple cinnamon muffins.
*If desired you can keep the peel on the apple pieces.
Apples are a good source of flavonoids, which have antioxidant properties. It is believed that most of this compound in apples is found in the peel.
So, eating apples with the peel still on is a more healthy way to eat an apple!
