I Just made this Healthy Applesauce Cake Recipe complete with tasty raisins and walnuts and it turned out fabulous!
A perfect recipe for a Christmas Cake, or enjoy this apple cake at any time of the year!
Serve sprinkled with icing sugar, drizzled with caramel sauce, or plain...any way it is the best cake made with applesauce in Town!
1 cup butter, softened
1 cup granulated sugar
2 medium eggs
3 1/2 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. ground cinnamon, or to taste
1 tsp. ground nutmeg, or to taste
1 cup *chopped walnuts
2 cups raisins
2 cups applesauce (sweetened or unsweetened)
icing sugar for garnish, optional
caramel sauce/syrup for garnish, optional
In a large bowl, using an electric hand mixer, cream the butter and sugar together until well combined.
Add the eggs, and beat well, then set mixture aside.
In another bowl, whisk together the flour, baking soda, salt cinnamon and nutmeg (optional). Reserve 1/2 of this mixture, and add the raisins and the walnuts to it, then set mixture aside.
Add the remaining flour mixture to the creamed (butter) mixture alternating with the applesauce, and mix until well combined.
Using a wooden spatula, fold in the nut/raisin mixture.
Pour apple cake batter into a greased (I like to use non-stick cooking spray), regular size bundt pan.
Bake at 350° F for about 1 hour, or until a toothpick inserted in the center of the cake comes out clean.
Cool in pan for about 10 minutes, then invert to a wire rack or plate to cool completely.
If desired sprinkle cooled applesauce cake with icing sugar.
Drizzle caramel sauce/syrup over pieces of cake before serving, optional.
(I used store-purchased Caramel Syrup for Ice Cream Topping).
Serves: 18 - 20.
If the walnuts you have on hand are not chopped walnuts, simple place them in a sealed plastic bag, or between waxed paper, and roll over the walnuts with a rolling pin.
