I made this recipe as a starter course salad, and it turned out amazing!
I used Gala apples to make this salad, but many other apple types will work equally as well.
Ingredients
1 tbsp. butter
2 apples
3 tbsp. apple cider vinegar or sherry vinegar, divided
1 1/2 tbsp. packed brown sugar
3 tbsp. olive oil
1 tsp. Dijon mustard
1 tsp. liquid honey
1/4 tsp. salt
1/8 tsp. pepper
12 cups baby arugula lettuce or spring mix greens (I used the spring mix)
3 1/2 oz. Feta cheese (broken into small chunks)
1/4 cup toasted hazelnuts or chopped pecans (I used pecans)
Directions
Core the apples and cut into slices.
In a pan, melt the butter over medium-high heat.
Add the prepared sliced apples to the pan and cook for about 1 minute.
Add 1 tbsp. of the vinegar and the brown sugar. Toss to coat.
Continue to cook for about 2 more minutes or until the apples are just tender.
In a large bowl, whisk together the olive oil, remaining 2 tbsp. of vinegar, Dijon mustard, honey, salt and pepper.
Add the lettuce, and toss to coat.
Divide the salad among 4 salad plates, sprinkle with the Feta cheese, hazelnuts/pecans and the warm pears.

How to Chop Nuts Without the use of a Blender
To chop nuts without the use of a blender place the whole nuts between a folded piece of waxed paper or inside a plastic bag.
Using a pastry rolling pin, gently roll over the nuts inside the waxed paper or the bag to chop them.
How to Toast Nuts in the Oven
Toasting nuts in the oven adds "crunch" to the salad or whatever recipe they are being added to. Toasting also intensifies the flavour of the nuts.
To toast the nuts, simply spread them on a single layer on a shallow baking dish or a cookie baking tray.
Bake in the oven at 350° F for about 3 - 4 minutes or until golden brown, stirring occasionally.
Be sure to keep a close watch because they will burn very easily and quickly!
