If you have been searching for the best recipe for Dutch Pancakes, you have found it here! I make these pancakes for breakfast, brunch, lunch, or dinner, and, of course, on Pancake Day!
It is a very thin pancake, similar to a crepe, which is rolled up with a fork, and then sliced to eat.
So Yummy! And ... you can substitute the apple pieces with any type of your favourite berries if desired.

Making your own pancakes is really quite quick and easy, and definitely worth the effort.
I like to make a large batch, and then store any leftover in the refrigerator until the next morning. Whoever is lucky to be the first up for breakfast the next morning reheats the pancakes in the microwave, and, although not as tasty as when fresh, they are delicious reheated too!
When making pancakes for breakfast, (or another meal), sometimes I serve just pancakes, with an assortment of toppings. At other times I like to add bacon or sausages as a side.
When including apples in a pancake recipe, it is advisable to peel, core, and finely chop or grate the apple before adding it to the pancake batter.
Ingredients
5 eggs.
2 1/2 cups all-purpose flour
3 3/4 cups milk
1/3 cup margarine or (butter), melted
1/2 tsp. salt
1/2 tsp. vanilla extract
2 - 3 medium size peeled apples, grated or finely chopped
Directions
In a large bowl, using an electric hand mixer, beat the eggs well.
Gradually add the flour, alternating with the milk, until mixture is smooth.
Mix in the melted margarine, salt and the vanilla.
Stir in the grated apple pieces.
Add a small amount of shortening to the frying pan.
Pour about 2/3 cup into a cast iron fying pan, fry on the first side, then flip over and complete frying on the other side, until golden brown.
Transfer pancake to a plate in a warm oven, until all pancakes are fried.
Serve warm with sugar, jam or maple syrup.
Roll pancake with a fork, as shown in photo above.
Makes about 12 large pancakes.
