Apple Oatmeal Muffins Recipe Made with Apple Pie Filling

If you love baked goods with oatmeal, you have come to the right place!

I used store-purchased apple pie filling for these muffins, but if you make your own apple pie filling, that would work equally as well!


Apple Oatmeal Muffins

Ingredients

2 cups all-purpose flour
1 1/2 cups rolled oats
1 tbsp. baking powder
1 tsp. salt
2 eggs
1 cup milk
1 cup liquid honey, divided
1/3 cup butter, melted
1 can (19 oz./540 ml. size) apple pie filling, coarsely chopped
1 cup finely chopped pecans, divided







Directions

In a large bowl, whisk together the flour, oats, baking powder and salt.

In another bowl beat the eggs slightly (using a whisk), and then stir in the milk, 3/4 cup of honey and the melted butter.

Add the milk mixture, the apple pie filling, and 1/4 cup of nuts to the dry ingredients, and stir just until combined.







Spoon the muffin batter into 15 large size greased or paper-lined muffin cups, about 3/4 full.

Sprinkle the remaining 3/4 nuts over the muffin batter in the baking cups.

Bake at 400° F for about 25 minutes, or until a toothpick inserted in the center comes out clean.

Remove muffins from the oven, and, while they are still hot, drizzle with the remaining 1/4 cup of honey.

Makes 15 large size apple muffins.

Baking Tip

If you have whole nuts on hand, simply chop them finely by placing them between waxed paper or inside a plastic bag, and rolling over them with a rolling pin - works great!
