Ingredients
1/2 cup butter
1 cup granulated sugar
2 eggs
1 tsp. vanilla extract
1 cup coarsely shredded, unpeeled apple
2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup *chopped walnuts or nuts of your choice
Note - to chop whole nuts, place them between waxed paper or in a small plastic bag, and roll over them with a pastry rolling pin.
Directions
In a bowl, using an electric hand mixer, beat the butter and sugar together until well combined.
Add eggs, one at a time, and continue to beat until smooth.
Stir in the vanilla extract.
Shred the apple on a fairly coarse grater, and stir into mixture.
In another bowl, using a fork or a whisk, mix together the flour, baking powder, baking soda, salt and the nuts.
Add the dry ingredients to the butter mixture, and stir just until moistened. Be careful not to over-mix, or else the texture of the loaf will not be tender.
Scrape batter, (batter will be thick), into a greased, (I used non-stick cooking spray), 9" x 5" x 3" (23 x 12 x 7 cm) loaf pan.
Bake at 350 ° F for 45 - 50 minutes, or until a toothpick inserted in the center comes out clean.
Allow bread to cool for about 10 minutes before removing from pan.
Cool on a wire rack.
Did You Know?
Apples are a good source of flavonoids, which have antioxidant properties. It is believed that most of this compound in apples is found in the peel. So, eating apples with the peel still on is a more healthy way to eat an apple.
