The crunchy apple adds great texture and sweetness. If desired you can leave the skin on the apples ... that will make this fruit salad even healthier!
Ingredients
2 apples cored, cubed (if desired, peel apples)
1 fresh mango, peeled and cubed
1 cup fresh blueberries (or blackberries)
1 cup fresh, quartered strawberries
1 lime, juiced
1 1/2 tsp. liquid honey
3 fresh mint leaves, thinly sliced, optional
1 1/2 tbsp. desiccated coconut
Directions
In a large bowl, combine the prepared apples, mango, blueberries (or blackberries), and the strawberries.
In a small, microwave-safe, bowl, mix the lime juice and the honey.
Microwave the honey mixture on medium-high power for about 15 - 20 seconds to soften the honey.
Pour the lemon juice mixture over top of the fruit in the bowl.
If desired, add the mint leaves and gently, so as not to break the berries too much, toss to combine.
In a small skillet, toss the desiccated coconut over medium high heat until lightly toasted, about 5 minutes.
Sprinkle the toasted coconut over the fruit salad just before serving.
