A great idea for a Fall/Autumn recipe for Thanksgiving Day Dinner! It's quick and easy to make too!
The simple shortbread base is all the crust entails. The combination of the apples and pears blends into a fabulous flavour and texture in this fruit flan.
Ingredients
FOR THE BASE
1/2 cup butter
1/3 cup granulated sugar
1 cup all-purpose flour
FOR THE FILLING
3 pears
2 apples
4 oz. (1/2 cup) cream cheese
1/2 cup granulated sugar
2 medium size eggs
3/4 cup milk
1/2 tsp. vanilla extract
1/3 tsp. ground cinnamon
1/4 cup sliced almonds
Directions
FOR THE BASE
In a medium size bowl, cream the butter and the sugar together using a fork.
Add the flour, and continue to mix until the mixture is smooth.
Pat the batter into the bottom and sides of a 10" pie dish.
FOR THE FILLING
Peel, core and slice the apples and the pears.
Place the fruit on top of the crust, piling the fruit slightly higher in the center.
In a medium size bowl, beat the cream cheese until smooth, using an electric hand mixer.
Add in the sugar, and continue to mix.
Add in the eggs, one at a time, continuing to beat until smooth.
Add in the milk and the vanilla, and mix until smooth.
Pour the cream cheese mixture over the fruit in the baking dish.
Sprinkle the top with the cinnamon and the sliced almond.
Bake at 425°F for 10 minutes.
Reduce heat to 350°F and bake for another 35 - 40 minutes longer, or until the filling is set in the center.
Serve warm or cold.
