Ingredients

2 cups cornmeal
1/4 cup granulated sugar
1 1/2 tsp. salt
2 cups buttermilk
2 tbsp. margarine
1 tsp. baking soda
1 tsp. cold water
2 medium eggs, well beaten
1 cup chopped, cored, peeled apple

Directions

In a large pan, combine the cornmeal, granulated sugar, salt, buttermmilk and the margarine.

Cook the above mixture over medium-low heat for about 10 minutes, stirring almost constantly to avoid sticking and burning.

Allow mixture to cool.

Add the baking soda to the water, and stir to dissolve completely.

Add the soda mixture, eggs, and the prepared apple to the cornmeal mixture, and stir just to combine. Do not over-mix.

Pour batter into a greased (I use non-stick cooking spray), loaf pan and bake at 400 ° F for about 20 minutes or until a toothpick inserted in the center of the loaf comes our clean.

Serves 8.

Did You Know?

Do you know the difference between "cornmeal" and "corn flour"?

Cornmeal is a meal (coarse flour) ground from dried maize or corn. It is a common "staple" type of food.

Cornmeal or Cornflour whats the difference

Cornmeal is commonly ground to a fine, medium, or a coarse consistency, but not to a consistency as fine as wheat flour.

In the the United States, very finely ground cornmeal is also referred to as corn flour.

There are also different types of cornmeal.

Two of the more common types are steel ground yellow cornmeal (has the husk and germ of the maize kernel almost completely removed), and stone-ground cornmeal (has some of the hull and germ remaining).

Why not consider making a delicious apple soup to accompany the freshly baked cornbread?
