This Apple Cornbread Recipe makes a delicious, homemade, and healthy apple bread. The perfect accompaniment to a soup or stew any day!

Ingredients
2 cups cornmeal
1/4 cup granulated sugar
1 1/2 tsp. salt
2 cups buttermilk
2 tbsp. margarine
1 tsp. baking soda
1 tsp. cold water
2 medium eggs, well beaten
1 cup chopped, cored, peeled apple
Directions
In a large pan, combine the cornmeal, granulated sugar, salt, buttermmilk and the margarine.
Cook the above mixture over medium-low heat for about 10 minutes, stirring almost constantly to avoid sticking and burning.
Allow mixture to cool.
Add the baking soda to the water, and stir to dissolve completely.
Add the soda mixture, eggs, and the prepared apple to the cornmeal mixture, and stir just to combine. Do not over-mix.
Pour batter into a greased (I use non-stick cooking spray), loaf pan and bake at 400 ° F for about 20 minutes or until a toothpick inserted in the center of the loaf comes our clean.
Serves 8.
