This Old Fashioned Apple Coffee Cake makes a delicious, moist cake with apples and cinnamon, just like the one Grandma used to make!

There are some cake recipes that you just never get tired of enjoying, and this is one of those family favourite recipes.
This cake can be baked in a tube or bundt pan.
You can chose to dust the top with icing sugar, or add a dollop of whipped cream, whipped dessert topping, or Greek yogurt before serving. YuMmY!
Ingredients
FOR THE CAKE
3 cups all-purpose flour
1 3/4 cups granulated sugar
1 tbsp. baking powder
1/4 tsp. salt
4 medium size eggs
1 cup vegetable oil
1/3 cup apple juice or orange juice
2 tsp. vanilla
FOR THE FILLING
4 large size apples, peeled, cored, thinly sliced
1/3 cup granulated sugar
1 1/2 tsp. cinnamon
icing sugar, optional
Directions
In a medium size bowl, whisk together the flour, sugar, baking powder and the salt.
In a large size bowl, beat the eggs with an electric hand mixer, then beat in the oil, juice and vanilla.
Gradually beat in the flour mixture, beating until smooth, (batter will be stiff).
Toss the apples in a medium size bowl with the sugar and the cinnamon.
Spread 1/3 of the cake batter into a greased and floured tube or bundt pan.
Cover the batter with 1/2 of the sliced apples.
Repeat the layers.
Spread the remaining 1/3 batter on top.
Bake in the center of the oven at 350° F for about 65 - 75 minutes, or until a toothpick inserted in the center of the cake comes out clean.
Allow cake to cool in the pan for about 15 minutes, and then remove cake from pan, and allow cake to cool completely on a wire rack.
If desired, dust cake with icing sugar before serving.
Or, top cake with a dollop of whipped cream, whipped dessert topping, or Greek yogurt at the time of serving.
Serves 10 -12.
