Made from "scratch" this simple apple dessert will serve about 8 people, and can be served warm (that's how I like it best), or cool, plain, or with a dollop of whipped cream or ice cream.
Oh, and ... don't worry about storing any left-overs ... you won't have any :)
Ingredients
FOR THE FRUIT MIXTURE
9 - 12 medium size apples (about 3 pounds)
3/4 cup granulated sugar
3 tbsp. all-purpose flour
1 tsp. ground cinnamon
1/4 tsp. salt
1/4 cup water
1 tbsp. cold butter, cut into very small pieces
FOR THE TOPPING
1/2 cup all-purpose flour
1/2 cup granulated sugar
1 tsp. baking powder
1/4 tsp. salt
2 tbsp. cold butter, cut into small pieces
1 egg, lightly beaten
1 tsp. vanilla extract
Directions
FOR THE FRUIT MIXTURE
Peel, core and slice the apples into a large size mixing bowl.
Add the granulated sugar, flour, cinnamon, water and pieces of butter to the sliced apples in the bowl, and toss to coat.
Transfer the apples to a deep-dish pie dish. If you do not have a deep-dish pie dish, a 9" x 13" baking dish should work fine.
FOR THE TOPPING
In a small mixing bowl, combine the flour, sugar, baking powder and salt.
Gently stir in the pieces of butter.
Add the vanilla extract and the lightly beaten egg, and stir in just until the batter is evenly moistened - do not over-mix. (The topping batter will be sticky.)
Add the topping to the apple mixture in the pie dish by spoonful (dollops).
Bake in oven at 350° F for about 35 - 45 minutes, or until the topping is golden brown.
Serves 8.
Serve warm or cooled, plain or with a dollop of whipped cream or a scoop of vanilla ice cream.
HINT - add extra garnish that you may have on hand, for example: caramel sauce, or fresh fruit such as raspberries or blueberries.
