1/2 medium onion, diced
1 medium-large carrot, peeled and diced
3 celery stalks, diced
1/2 cup chopped celery leaves
1 medium garlic clove, minced
1 apple, peeled, cored and diced
3 cups beef soup broth or 3 cups water including 3 bouillon cubes
2 tsp. curry powder or less (to taste)
1 tsp. ground cumin or less (to taste)
1 tsp. thyme
salt, to taste
pepper, to taste
vegetable oil, for preparation
Add vegetable oil to a medium size pan, and saute the diced onion, diced carrot, and the diced celery, for about 10 minutes.
Add the diced potato, and continue to saute for about 5 minutes longer.
Add the minced garlic, the diced apple, and the spices, and continue to saute for a few more minutes.
Add the broth, and use a wooden spoon to stir contents from the bottom of the pan, and bring mixture to a constant simmer.
Simmer for about 10 minutes, and then add the chopped celery leaves and cook for another 2 minutes.
Blend the soup mixture, or keep it with the "chunky" texture, (or blend part of it, and keep part of the mixture textured).
Makes about 4 servings.
