This Fresh Apple Cake Recipe is so easy to make, and you don't even need to get a mixer dirty! ;)

This cake is baked in an 8" or 9" square baking pan. Complete with raisins and nuts, this recipe will soon become a family favourite!
Ingredients
1 3/4 cups coarsely chopped, peeled apples
1 cup granulated sugar
1 3/4 cups all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. all-spice
1/2 cup vegetable oil
1 medium size egg
1/2 cup raisins
1/2 cup chopped walnuts
icing sugar, for dusting top of baked cake
Directions
In a large size bowl, toss the prepared apples in the sugar, and let stand for about 10 minutes.
In a medium size bowl whisk together the flour, baking soda, salt, cinnamon, nutmeg and allspice.
In a large size bowl, beat the egg with a fork, add the oil, and mix to combine.
Stir the dry (flour mixture) ingredients into the egg/oil mixture, just until well combined.
Gently fold in the raisins and the chopped walnuts.
Spread the cake batter evenly into a greased, 8" or 9" square baking pan.
Bake at 350° F for about 50 -55 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Allow cake to cool for about 15 minutes, then dust with icing sugar (*see Tip below).
Serves 9.
TIP
To make a special effect on the cake surface, use a heart shape (great for Valentine's Day, or a Christmas tree, or an "x" or an "o" , or any shape and place this shape down on the center of the surface of the cake before dusting the top with the icing sugar.
Then proceed to dust the top of the cake with the icing sugar.
Remove the shape from the center of the top of the cake, and you have the special effect!
