This recipe is originally my Dear Mom's recipe, the apple cake she often made due to popular demand.
Now I use this same recipe and my family keeps asking for it too!
You KNOW a recipe is scrumptious if it is a family favourite!
This apple cake recipe uses common ingredients that you probably have in your kitchen at all times. This recipe is baked in a 9" x 13" baking dish.
Ingredients
FOR THE STREUSEL TOPPING
1/2 cup brown sugar
2 tbsp. butter
2 tbsp. all-purpose flour
1 tsp. cinnamon, or to taste
1/2 cup chopped walnuts, or chopped pecans
FOR THE CAKE
1/2 cup butter
1 cup granulated sugar
1 egg
1 tsp. vanilla extract
1/2 cup milk
1 1/2 cup all-purpose flour
1/2 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
2 1/2 cups peeled, cored, chopped apples
Directions
FOR THE STREUSEL TOPPING
In a small bowl, combine the butter, brown sugar, flour, cinnamon, and the nuts, and stir with a fork till well combined, and mixture resembles coarse crumbs.
FOR THE CAKE
In a large bowl, beat, with an electric mixer, the butter and the granulated sugar until well combined.
Continue to beat and add the egg, then the vanilla extract and the milk.
While beating, gradually add the flour, baking powder, baking soda and the salt, just until well combined.
Using a spatula, fold in the prepared chopped apple pieces.
Spread the mixture into a greased, 9" x 13" baking dish.
Sprinkle the batter evenly with the struesel topping mixture.
Bake at 325° F for about 45 minutes, or until a toothpick inserted into the center comes out clean.
Serve warm or at room temperature, plain or with a dollop of whipped cream, whipped dessert topping, or ice cream.
ENJOY!
